This recipe works great as a healthy side for any bbq.  Pair these with BBQ Ribs, Steak or Lamb for a full meal.

Ingredients:

2 Onion
2 Red Pepper
1 Eggplant
2 Zuchini
2 Yellow Squash
1 Radicchio
Chopped Parsley
Olive Oil
Salt and Pepper

Directions:

1. Set grill to medium high heat.
2. Quarter the onions and cube the remaining vegetables.
3. Toss in olive oil and sprinkle in salt and pepper.
4.  Place on Grill for 10-15 minutes. You want the veggies to begin to brown.
